Lima Bean Loaf

Lima Loaf

1 cup whole grain bread crumbs (I use whatever old bread is on hand)
2 cups cooked lima beans, drained and pureed
1 1/2 cups grated cheddar cheese
1/4 cup minced onions
1/4 teaspoon garlic powder
1 cup milk
3 eggs, beaten
1 cup tomato sauce


Preheat oven to 350. Spray a 9x5 inch loaf pan. In large bowl mix together bread crumbs, pureed beans, cheese, onions and garlic powder.

Gradually stir in milk, then mix in eggs, one at a time. Turn into prepared loaf pan.

Place loaf pan in a larger pan and add 1 inch of hot water to outer pan.  Bake for 1 hour, or until knife inserted in center of loaf comes out clean. (Usually, I only make this on a day when other things are in the oven too.)

Heat tomato sauce and serve on the side. Enjoy.
